Eikendal Merlot
ORIGIN: Stellenbosch DESCRIPTION: Full-bodied with a deep color. It has a soft, seductive character, with spicy berry flavors. Though drinkable at an early age of two years, it also matures elegantly and will continue to please at least for five to six years. CLIMATE: Mediterranean - dry warm summers and cold wet winters. Eikendal lies close to the sea, enjoying the benefits of both the cooling south-east breezes from nearby False Bay, and the gentle warmth of the afternoon sun. SOIL: Decomposed sandstone mixed with clay. Merlot vines are well suited to the micro-climatic conditions which prevail at Eikendal Vineyards YIELD: Seven hectares of Merlot are in production and another four hectares will be planted shortly to yield their first harvest at the dawn of the next millennium. VINIFICATION: Produced with temperature-controlled fermentation in contact with the skins, followed by twelve months of aging in French oak barriques.
