Fairview Shiraz
DESCRIPTION: A rich robust style with lots of fruit flavors mingled with typical Shiraz smoky characteristics. Enjoyable while young, but can mature for up to 12 years in the bottle. ORIGIN: Paarl CLIMATE: Mediterranean - dry warm summers and cold wet winters with an annual rainfall of about 700 mm. SOIL: Shiraz is planted on many different soil types at Fairview. On the mountain slopes we have decomposed granite and on the valley floor, light sandy soil. VINIFICATION: Full ripe grapes at +/- 24' are harvested. All different blocks are vinified separately. Approximately 25% of whole clusters are tipped into fermenters which are filled with destalked uncrushed berries. Grapes are pressed out before fermentation is complete and immediately transferred to 3rd, 4th and 5th barriques. They receive post fermentation racking followed by egg fining. After 12 months the wine is removed from barrels for bottling. CHEMICAL ANALYSIS: Alcohol: 13.5% / Vol pH: 3.6 Total acidity: 5.6 g/l Sugar: 1.9 g/l |
