Simonsvlei Cabernet/Merlot Blend
DESCRIPTION: Dark, youthful purple. Clean soft aromas, good intensity of juicy fruit, with a whisper of oak. CLIMATE: Mediterranean - dry warm summers and cold wet winters with an annual rainfall of about 700 mm. SOIL: Granite to clay TRELLISING: Five-wire & Bushvine YIELD: 8 tons/ha VINIFICATION: Hand picked, destalked, and placed in cement tanks. Cabernet in barrels for eight months 100%. Fining - eggwhite. Filtration - Kieselguhr & sheet. Stabilization -5 deg. C. CHEMICAL ANALYSIS: Alcohol: 11.75% / vol pH: 3.74 Total acidity: 5.34 Sugar: 1.9 |
